Veg Galette with Green Celebration
A golden, flaky pastry filled with creamy cheese and vibrant spring vegetables, brought to life with Aromi’s Green Celebration spice blend.
🧾 Ingredients
For the pastry:

1¼ cups plain flour
-
100g cold butter, cubed

1/4 tsp salt
-
3–4 tbsp cold water
Or use 1 sheet of quality shortcrust or puff pastry for ease.
For the filling:
-
1/2 cup ricotta cheese
-
1/4 cup cream cheese (or goat’s cheese)
-
1 egg yolk
-
1 tsp Aromi Green Celebration
-
Salt & pepper to taste
-
1 tsp lemon zest
Veggies (choose a mix):
-
1/2 cup sliced leeks (sautéed until soft)
-
6–8 asparagus spears, trimmed and halved
-
1/2 zucchini, thinly sliced
-
A few cherry tomatoes, halved
-
Olive oil
-
Optional: chilli flakes, extra herbs
To finish:
-
1 egg (for egg wash)
-
Extra Green Celebration to sprinkle on top
🥣 Method

Make the pastry (if not using store-bought):
In a bowl, rub butter into flour and salt until crumbly. Add cold water gradually and mix into a dough. Wrap and chill for 30 mins. -
Prepare the filling:
In a small bowl, mix ricotta, cream cheese, egg yolk, Green Celebration, lemon zest, salt, and pepper. Set aside. -
Roll out pastry:
On a floured surface, roll the pastry into a rough 25–30cm circle. Transfer to a lined baking tray. -
Assemble the galette:
Spread the cheese mixture in the centre, leaving a 4–5cm border. Arrange veggies on top. Drizzle with olive oil and season with salt, pepper, and a pinch of Green Celebration. -
Fold the edges:
Gently fold the pastry edges over the filling, pleating as you go. Brush the crust with egg wash. -
Bake:
Bake at 200°C for 35–40 minutes or until golden and cooked through. Let cool slightly before slicing. -
Serve:
Delicious warm or at room temperature, with a simple green salad and a glass of crisp white wine.
