Smashed Avo with Alexandrian Afternoon

Ingredients:

  • 2 ripe avocados
  • 1 teaspoon Alexandrian Afternoon spice blend
  • 1 tablespoon lemon juice
  • Salt, to taste
  • 2 tablespoons finely chopped red onion
  • 1 small tomato, diced
  • 2 tablespoons chopped coriander or parsley
  • 4 slices of your favorite bread, toasted
  • Optional toppings: crumbled feta cheese, sliced radishes, or extra coriander

Instructions:

Prepare the Avocado:

Halve the avocados, remove the pits, and scoop the flesh into a medium bowl.
Season:

Add the Alexandrian Afternoon spice blend, lemon juice, and a pinch of salt to the avocados.
