Prepare the Crispy Rice Paper:
- Start by cutting the rice paper sheets into quarters, creating eight pieces.

Prepare the Tartare:
- Finely chop the tuna, cucumber, and avocado. Add them to a mixing bowl.
- Slice the tomato and gently squeeze out the juice and pulp into the bowl, leaving the tomato flesh aside.
- Add the lemon zest and juice to the bowl.
- Sprinkle in the Santorini Sea Spice and add a pinch of salt. Mix well to combine all the ingredients.
-
Assemble the Dish:
- Place the crispy rice paper pieces on a serving platter.
- Generously spoon the tuna tartare mixture onto each piece of crispy rice paper.
- For an extra touch, garnish with a sprinkle of Santorini Sea Spice and a zest of lemon.
