Roasted Tuscan-Style Tomatoes on Yogurt

This simple yet elegant dish brings the sunny flavours of Tuscany right into your kitchen. Juicy, high-heat roasted tomatoes burst with flavour atop a creamy bed of yogurt, drizzled with olive oil and a sprinkle of Aromi Spices' Tuscan Sunset blend. It's perfect as a refreshing appetizer or a light side dish.

Ingredients:

  • 500g cherry tomatoes
  • 2 tablespoons extra virgin olive oil, plus extra for drizzling
  • Salt to taste
  • 1 cup Greek yogurt (use dairy-free if preferred)
  • 1-2 teaspoons Aromi Spices Tuscan Sunset spice blend
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat Oven Or a Pan : Preheat your oven to 220°C (428°F). This high heat will help the tomatoes roast quickly, retaining their juicy interior while getting a lovely char on the outside.

  2. Prepare Tomatoes: Wash the cherry tomatoes and pat them dry. Toss them in a bowl with 2 tablespoons of olive oil and a pinch of salt until evenly coated. Spread the tomatoes on a baking sheet in a single layer.

  3. Roast Tomatoes: Place the baking sheet in the oven and roast the tomatoes for about 15-20 minutes, or until they are charred and burst open. The high heat concentrates the tomatoes’ flavours and adds a wonderful smokiness. You can also just pan fry them. 

  4. Prepare Yogurt Base: While the tomatoes are roasting, spread the Greek yogurt across a serving platter or in individual bowls. The yogurt will provide a cool, creamy contrast to the warm tomatoes.

  5. Assemble the Dish: Once the tomatoes are roasted, remove them from the oven and let them cool slightly. Spoon the warm tomatoes over the yogurt. Drizzle with additional olive oil and sprinkle generously with Aromi Spices Tuscan Sunset to infuse the dish with those beloved Tuscan flavors.

  6. Garnish and Serve: Garnish with fresh basil leaves if desired. This adds a fresh, herby brightness that complements the tomatoes and spices beautifully.
