Roasted Pumpkin Salad
This Roasted Pumpkin Salad is not only visually stunning but also packed with flavours that’ll make your taste buds dance.
Ingredients:
For the Salad:
- 1 small butternut pumpkin (approx. 1kg) – peeled and cubed
- 2 tbsp olive oil
- 1 tsp Cinnamon Kisses – for a warm, sweet touch
- 1 tsp Ras El Hanout – adding a hint of North African magic
- Salt and pepper – to taste
- 150g baby spinach leaves – fresh and crisp
- 1 red onion – sliced and roasted for a sweet, caramelised flavour
- 100g feta cheese – crumbled, for that creamy, tangy flavour
- 1/4 cup pumpkin seeds (pepitas) – toasted to perfection
For the Dressing:
- 3 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey – adding natural sweetness
- 1 tsp Dijon mustard – for a bit of zing
- Salt and pepper – to taste
Instructions:
Preheat the Oven:
First things first, preheat your oven to 200°C (400°F). This will ensure that our pumpkin and onion roast to golden perfection.
Prepare the Pumpkin and Onion:
In a large bowl, toss the cubed pumpkin and sliced red onion with olive oil, Cinnamon Kisses, Ras El Hanout, salt, and pepper. Make sure each piece is well-coated with these aromatic spices.
Roast the Pumpkin and Onion:
Spread the seasoned pumpkin cubes and onion slices in a single layer on a baking sheet lined with baking paper. Roast in the preheated oven for 25-30 minutes, turning once halfway through, until the pumpkin is tender and caramelised and the onion is nicely roasted.
Prepare the Dressing:
While the pumpkin and onion are roasting, whisk together the extra-virgin olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper in a small bowl. This simple yet delicious dressing will bring all the salad elements together.
Assemble the Salad:
In a large serving bowl, combine the baby spinach, roasted pumpkin, roasted onion, crumbled feta, and toasted pumpkin seeds. Drizzle the dressing over the salad and toss gently to combine, ensuring every bite is bursting with flavour.
