Pesto Pasta with Cherry Tomatoes

Ingredients:

250g pasta (spaghetti, penne or your favourite)

β cup pesto (homemade or good-quality store-bought)

1 punnet (about 200g) cherry tomatoes, halved

1 tsp Aromi Green Celebration spice blend

Olive oil, for drizzling

Salt and pepper, to taste

Parmesan, to serve (optional)
Instructions:

Cook the pasta in a large pot of salted boiling water according to packet instructions. Drain, reserving a splash of the pasta water.

Toss the pasta with the pesto, adding a little reserved pasta water if needed to loosen the sauce.

Stir through the halved cherry tomatoes and sprinkle over Aromi Green Celebration for a herby, aromatic finish.

Season with salt, pepper and a drizzle of olive oil.

Serve warm, topped with freshly grated Parmesan if you like.
