Persian Love Cake

Ingredients:
For the Cake:
- 1 1/2 cups plain flour
- 1 cup almond meal
- 1 1/2 cups sugar
- 1 cup unsalted butter – melted
- 3 large eggs
- 1 cup Greek yoghurt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cardamom
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/4 tsp saffron threads – soaked in 1 tbsp warm milk
- 1 tbsp rosewater
- 1 tsp vanilla extract
- Pinch of salt
For the Syrup:
- 1/4 cup sugar
- 1/4 cup water
- 1 tbsp lemon juice
- 1 tbsp rosewater
For the Topping:
- 1/2 cup pistachios – chopped
- 1/4 cup dried rose petals – for garnish (optional)
- 1 tbsp powdered sugar – for dusting
Instructions:
Preheat the Oven:
- Preheat your oven to 175°C (350°F). Grease and line a 23cm (9-inch) springform cake pan with baking paper.
Prepare the Cake:
- In a large mixing bowl, combine the flour, almond meal, sugar, baking powder, baking soda, ground cardamom, ground nutmeg, ground cinnamon, and salt. Mix well.
- In another bowl, whisk together the melted butter, eggs, Greek yoghurt, rosewater, vanilla extract, and the saffron milk mixture.
- Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake the Cake:
- Bake in the preheated oven for 45-50 minutes, or until a skewer inserted into the centre of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Prepare the Syrup:
- In a small saucepan, combine the sugar, water, and lemon juice. Bring to a boil, stirring until the sugar dissolves.
- Remove from heat and stir in the rosewater. Let the syrup cool slightly.
Assemble the Cake:
- While the cake is still warm, poke holes all over the top with a skewer and pour the syrup evenly over the cake.
- Once the cake has cooled completely, sprinkle the top with chopped pistachios and dried rose petals.
- Dust with powdered sugar before serving.
