Orange and Cardamom Slice
Ingredients:
For the Cake Base:
- 1 cup (200g) caster sugar
- 3 large eggs
- 1/2 cup (125ml) vegetable oil
- 1 cup (250ml) freshly squeezed orange juice
- 1 tablespoon finely grated orange zest
- 2 cups (300g) self-raising flour
- 1 teaspoon ground cardamom
- 1/2 teaspoon baking powder
- A pinch of salt
For the Glaze:
- 1 cup (120g) icing sugar
- 2 tablespoons freshly squeezed orange juice
- 1/2 teaspoon ground cardamom
Method:

Preheat and Prepare:
- Preheat your oven to 180°C (350°F).
- Line a rectangular baking tin (approximately 20x30cm) with baking paper.

Prepare the Cake Batter:
- In a large mixing bowl, beat the sugar and eggs together until light and fluffy.
- Gradually add the oil while continuing to beat the mixture.
- Add the orange juice and zest, and mix until well combined.
- Sift together the flour, cardamom, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Bake:
- Pour the batter into the prepared baking tin and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes or until a skewer inserted into the center comes out clean.
- Allow the cake to cool completely in the tin.

Prepare the Glaze:
- In a small bowl, whisk together the icing sugar, orange juice, and cardamom until smooth.
- Once the cake is cool, drizzle the glaze evenly over the top.

Serve:
- Once the glaze has set, cut the cake into slices.
- Serve and enjoy the delightful combination of orange and cardamom flavors!
