Orange and Cardamom Slice

Ingredients:

For the Cake Base:

  • 1 cup (200g) caster sugar
  • 3 large eggs
  • 1/2 cup (125ml) vegetable oil
  • 1 cup (250ml) freshly squeezed orange juice
  • 1 tablespoon finely grated orange zest
  • 2 cups (300g) self-raising flour
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon baking powder
  • A pinch of salt

For the Glaze:

  • 1 cup (120g) icing sugar
  • 2 tablespoons freshly squeezed orange juice
  • 1/2 teaspoon ground cardamom

Method:

  1. Preheat and Prepare:

    • Preheat your oven to 180°C (350°F).
    • Line a rectangular baking tin (approximately 20x30cm) with baking paper.
  2. Prepare the Cake Batter:

    • In a large mixing bowl, beat the sugar and eggs together until light and fluffy.
    • Gradually add the oil while continuing to beat the mixture.
    • Add the orange juice and zest, and mix until well combined.
    • Sift together the flour, cardamom, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  3. Bake:

    • Pour the batter into the prepared baking tin and spread it out evenly.
    • Bake in the preheated oven for 25-30 minutes or until a skewer inserted into the center comes out clean.
    • Allow the cake to cool completely in the tin.
  4. Prepare the Glaze:

    • In a small bowl, whisk together the icing sugar, orange juice, and cardamom until smooth.
    • Once the cake is cool, drizzle the glaze evenly over the top.
  5. Serve:

    • Once the glaze has set, cut the cake into slices.
    • Serve and enjoy the delightful combination of orange and cardamom flavors!
