Homemade Granola with Cinnamon Kisses

Ingredients:

  • 3 cups rolled oats
  • 1 cup raw almonds, roughly chopped
  • 1 cup raw pecans, roughly chopped
  • 1/2 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/3 cup unsweetened shredded coconut
  • 3 tablespoons brown sugar
  • 2 tablespoon Cinnamon Kisses
  • 1/4 teaspoon salt
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried apple slices, chopped

Instructions:

  1. Preheat Oven and Prepare Pan: Preheat your oven to 150°C (300°F). Line a large baking sheet with parchment paper to prevent sticking.

  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped almonds, pecans, pumpkin seeds, sunflower seeds, shredded coconut, brown sugar, Cinnamon Kisses spice blend, and salt. Mix well to distribute the spices evenly.

  3. Combine Wet Ingredients: In a small bowl, whisk together the honey or maple syrup, melted coconut oil, and vanilla extract until well combined.

  4. Combine Mixtures: Pour the wet ingredients over the dry ingredients. Mix well, ensuring all the dry ingredients are coated evenly. This will help create nice, crunchy clusters.

  5. Bake: Spread the granola mixture evenly onto the prepared baking sheet. Bake in the preheated oven for about 20 minutes, or until golden brown and fragrant, stirring halfway through to ensure even baking.

  6. Add Dried Fruit: Remove the granola from the oven and let it cool on the baking sheet. Once slightly cooled, sprinkle the chopped dried apricots and apple slices over the granola. Toss gently to combine.

  7. Cool and Store: Allow the granola to cool completely on the pan. The granola will further crisp up as it cools. Once cool, transfer the granola to an airtight container. It can be stored for up to 2 weeks.

Serving Suggestion:

Serve this aromatic granola with a dollop of yogurt, a splash of milk, or simply as a crunchy topping for your morning smoothie bowl. Its warm, spicy notes make it a comforting yet nutritious breakfast option.
