Ingredients:

1 can (400g) chickpeas, drained and rinsed

1 Lebanese cucumber, diced

1 red capsicum, diced

Β½ cup fresh herbs (parsley, mint, or dill), chopped

2 tablespoons olive oil

Juice of 1 lemon

Instructions:

In a large bowl, combine chickpeas, cucumber, capsicum, and fresh herbs.
