Golden Curry with Chicken Koftas
Ingredients
For the Chicken Koftas: 500g minced chicken
1/4 cup fresh coriander, chopped
1 tsp salt
1/2 tsp black pepper
1 tbsp Aromi Green Celebration mix
1 tbsp olive oil
1 egg
2 tbsp flour (or breadcrumbs)
For the Golden Curry: 2 tsp Aromi Golden Milk Curry blend
2 tbsp olive oil
1 can (400ml) coconut cream
2 lime leaves (optional)
1 cup green beans (or other greens of your choice)
Instructions
Make the Chicken Koftas:
In a large bowl, combine the minced chicken, coriander, salt, pepper, Aromi Green Celebration mix, olive oil, egg, and flour. Mix well until fully combined. Shape the mixture into small balls (about golf-ball size). Bake at 180°C (350°F) for 15-20 minutes, pan-fry them in oil until golden, or deep fry until cooked through.
Prepare the Golden Curry:
In a large pan, heat the olive oil over medium heat. Add Aromi Golden Milk Curry blend and stir for 1-2 minutes until fragrant. Add the coconut cream and lime leaves, and let the mixture simmer gently for 5-10 minutes to allow the flavours to develop.
Combine the Koftas and Curry:
Add the cooked chicken koftas into the curry and let them simmer for another 5 minutes to soak up the flavours. Add the green beans and cook for another 3-4 minutes until tender but still vibrant.
Serve:
Serve the golden curry with chicken koftas over rice or with naan bread for a hearty and aromatic meal.
