Ingredients:

For the chicken:

  • 2 chicken breasts or thighs

  • 1 tablespoon Aromi Golden Milk Spice Blend

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

For the couscous:

  • 1 cup couscous

  • 1 cup boiling water or chicken stock

  • Zest and juice of 1 lemon

  • 1 tablespoon olive oil

  • Salt, to taste

  • Handful of chopped parsley (optional)


Instructions:

  1. Season the chicken:
    Pat the chicken dry. Rub with olive oil, Golden Milk Spice Blend, salt, and pepper until well coated.

  2. Cook the chicken:
    Heat a frying pan over medium heat. Cook chicken for 5–7 minutes each side, or until golden, cooked through, and juicy. Rest for a few minutes before slicing.

  3. Prepare the couscous:
    While the chicken cooks, place couscous in a bowl. Pour over boiling water or stock, cover with a plate, and let sit for 5 minutes. Fluff with a fork, then stir in lemon zest, lemon juice, olive oil, and a pinch of salt. Sprinkle with chopped parsley if using.

  4. Serve:
    Spoon couscous onto plates. Top with sliced golden chicken. Drizzle with any pan juices for extra flavour.
