Chicken Schnitzel with Herb Slaw

Ingredients
For the Schnitzel

4 chicken breast schnitzels (or chicken breasts, pounded thin)

1 cup plain flour

2 eggs, whisked
-
1½ cups panko breadcrumbs
-
2 tbsp Aromi Green Celebration spice blend
-
Salt and black pepper
-
Oil, for shallow frying
For the Herb Slaw
-
2 cups green cabbage, finely shredded
-
1 cup red cabbage, finely shredded
-
1 carrot, grated
-
½ red onion, finely sliced
-
1 handful parsley, chopped
-
1 handful mint, chopped
-
1 tbsp Aromi Green Celebration
-
3 tbsp Greek yoghurt
-
Juice of 1 lemon
-
1 tbsp olive oil
-
Salt, to taste
Method
Step 1 – Mix the slaw
In a large bowl, combine cabbage, carrot, onion, parsley, and mint. In a small bowl, whisk together the yoghurt, lemon juice, olive oil, and Green Celebration. Season and pour over the slaw. Toss and refrigerate.
Step 2 – Prep the schnitzel coating
Set up three bowls:

Flour + salt + pepper

Egg
-
Panko + Green Celebration
Step 3 – Crumb the chicken
Coat each schnitzel in flour, then egg, then the herbed panko. Press well to stick.
Step 4 – Fry
Heat oil in a large skillet over medium heat. Fry schnitzels for 3–4 mins each side until golden. Rest on paper towel.
Step 5 – Serve
Serve schnitzel with a generous pile of slaw, extra lemon wedges, and a spoon of mustard or yoghurt on the side.
