BBQ Lamb Chops with Basaar & Mint Sauce

Ingredients
For the lamb chops:

8 lamb cutlets or chops

2 tablespoons Aromi Basaar spice blend

2 tablespoons olive oil

1 teaspoon sea salt

Lemon wedges, to serve
For the mint sauce:

1 cup fresh mint leaves, finely chopped

½ bunch parsley (optional), finely chopped

1 small garlic clove, minced
-
2 tablespoons red wine vinegar or apple cider vinegar

1 tablespoon lemon juice
-
4 tablespoons olive oil

Salt, to taste
Method
1. Prepare the lamb
In a bowl, combine the Basaar spice blend with olive oil and salt to form a paste. Coat the lamb chops evenly and set aside for 30 minutes to marinate. For deeper flavour, marinate overnight in the fridge.
2. Make the mint sauce
Stir together the mint, parsley (if using), garlic, vinegar, lemon juice and olive oil. Season with salt. Set aside at room temperature while the lamb cooks.
3. Grill
Heat a barbecue or grill pan to medium-high. Cook lamb chops for 3–5 minutes on each side depending on thickness and preferred doneness. Rest for 5 minutes before serving.
4. Serve
Arrange lamb on a serving platter. Spoon over mint sauce and finish with lemon wedges.
