Turkish Eggs with Ras el Hanout Butter

A café-style brunch dish that brings big flavour with minimal effort. This recipe features creamy garlic yoghurt, poached eggs, and butter infused with Aromi’s Ras el Hanout spice blend – ready in just 20 minutes and perfect for lazy mornings or weekend brunch.

Ingredients

For the yoghurt base

  • 1 cup Greek yoghurt

  • 1 garlic clove, finely grated

  • Pinch of sea salt

For the poached eggs

  • 4 fresh eggs

  • 1 tablespoon white vinegar

For the spiced butter

  • 3 tablespoons unsalted butter

  • 1½ teaspoons Aromi Ras el Hanout

  • ½ teaspoon chilli flakes (optional)

To serve

  • Fresh herbs such as parsley or coriander

  • Turkish bread or sourdough, toasted


Method

  1. Prepare the yoghurt
    Combine the Greek yoghurt, grated garlic and sea salt in a bowl. Mix well and set aside at room temperature to soften the garlic’s sharpness.

  2. Poach the eggs
    Bring a saucepan of water to a gentle simmer and add the vinegar. Crack each egg into a small bowl, then gently lower into the water. Poach for 3 to 4 minutes until the whites are set and the yolks are still runny. Remove with a slotted spoon and drain on paper towel.

  3. Make the Ras el Hanout butter
    Melt the butter in a small saucepan over medium heat. Once foaming, stir in the Ras el Hanout (and chilli flakes, if using). Let it sizzle gently for about 30 seconds until aromatic. Remove from heat.

  4. Assemble the dish
    Spoon the garlic yoghurt onto two serving plates. Top each with two poached eggs, then drizzle generously with the Ras el Hanout butter. Finish with a scatter of fresh herbs.

  5. Serve
    Serve immediately with toasted Turkish bread or sourdough to scoop up the yoghurt and spiced butter.


Tips for Success

  • Use the freshest eggs you can find – they hold their shape better when poaching.

  • Don’t let the butter burn; it should be foamy and golden, not brown.

  • Add sautéed spinach or dukkah-roasted chickpeas underneath the eggs for extra substance.
